Instructions

Preparation

  • In a small bowl, mix the crumbled feta and finely chopped almonds until well combined.

Assembly

  • Place a small spoonful of the feta-almond mixture on one end of each cucumber slice. Roll the cucumber slice tightly around the filling and secure with a toothpick if needed.

Making the Drizzle

  • In a separate bowl, whisk together honey and balsamic vinegar until smooth.

Final Touch

  • Arrange the cucumber rolls on a serving platter. Drizzle with the honey balsamic mixture and garnish with fresh mint leaves and a sprinkle of black pepper.
