Ingredients

  • 1 large cucumber Provides a fresh, juicy, and crispy element.
  • 150 g whipped feta Made by blending feta, Greek yogurt, olive oil, and black pepper.
  • 100 g smoked salmon, finely chopped Adds a savory touch.
  • 1 tbsp fresh dill, finely chopped Brightens up the flavor.

  • 1 tbsp lemon zest For refreshing brightness.
  • 2 tbsp finely chopped pistachios For a delightful crunch.
  • 1 tbsp white sesame seeds Adds nutty depth.
  • 1/2 tsp sea salt flakes To enhance flavors.

Instructions

Preparation

  • Make the whipped feta by blending the feta cheese, Greek yogurt, and olive oil in a food processor until smooth and creamy. Add black pepper to taste.
  • Chill the whipped feta slightly in the refrigerator.
  • Slice the cucumber lengthwise into very thin ribbons using a mandoline or vegetable peeler. Pat dry with a paper towel.

Mix and Assemble

  • In a mixing bowl, combine the whipped feta, chopped smoked salmon, fresh dill, and optional lemon zest. Gently mix.
  • Lay 1-2 cucumber ribbons slightly overlapping on a clean surface. Place 1 heaping teaspoon of the filling at one end and roll tightly to enclose the filling.

Make Furikake

  • In a dry skillet over low heat, toast the sesame seeds and finely chopped pistachios for 3-5 minutes until golden and fragrant. Remove from heat and mix with sea salt, optional dried nori, and chili flakes.

Serve

  • Generously sprinkle the cucumber rolls with the pistachio furikake. Serve cold with a side of soy sauce or a drizzle of fresh lemon.

Notes

Batch prep the whipped feta a day in advance. Opt for organic cucumbers for better flavor. Customize the filling to your preference.
