For the Bread

Instructions

Preparation

  • In a small bowl, mix the warm water, pickle juice, sugar, and yeast. Let it sit for 5-7 minutes until it becomes foamy.
  • In a large bowl, combine the flour and salt. Pour in the yeast mixture and olive oil. Stir until the dough begins to come together, then knead the mixture on a floured surface for about 8-10 minutes until smooth and elastic.
  • Gently fold in the chopped dill pickles and fresh dill. Knead slightly to ensure even distribution.

Rising

  • Transfer the dough to an oiled bowl, cover it with a clean cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  • After rising, roll out the dough into a rectangle. Brush with olive oil and sprinkle with oregano and garlic powder. Place the sliced pickles on top, then roll tightly to form a loaf shape.
  • Place the rolled dough in a greased loaf pan, cover, and let it rise for another 30 minutes.

Baking

  • Preheat the oven to 375°F (190°C). Brush the top of the loaf with olive oil and sprinkle with sesame seeds and poppy seeds if using.
  • Bake for 30-35 minutes, or until golden brown and hollow when tapped on the bottom. Allow to cool slightly before slicing.

Notes

Make sure your water is warm but not hot when activating the yeast. You can try different herbs or spices for added flavor, and store the bread wrapped in plastic or in an airtight container for freshness. Freeze portions if necessary.
