Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×13" baking dish.
  • In a skillet, melt a small amount of butter and cook the chopped celery and diced onion until softened, approximately 5 minutes.

Mixing

  • In a large mixing bowl, combine the stuffing mix with the chicken broth and melted butter. Let it soak for 5 minutes.
  • In another bowl, mix the cream of chicken soup, sour cream, garlic powder, and thyme until smooth. Stir in the sautéed veggies and the chopped chicken.

Assembly and Baking

  • Spread half of the soaked stuffing mixture into the bottom of the greased dish. Pour the creamy chicken mixture on top, then layer the remaining stuffing over it.
  • Cover the dish with foil and bake for 25 minutes. Uncover and bake for an additional 10-15 minutes until the top is golden and bubbly.
  • If desired, sprinkle fresh parsley over the top before serving.

Notes

Consider adding shredded cheese for extra flavor or swapping chicken for turkey. Leftover rotisserie chicken can significantly reduce prep time.
