Ingredients

For the Burrata Bomb

  • 1 large burrata, drained well Opt for high-quality burrata for the best flavor.
  • 1 pcs egg, beaten This will help the coating stick to the burrata.
  • 2 tbsp flour For dusting the burrata before the egg wash.
  • 1/2 cup panko breadcrumbs Provides a crispy exterior.
  • 1 1/2 tbsp everything bagel seasoning Adds flavor and aroma to the breadcrumbs.
  • Neutral oil, for frying Ensure the oil is heated to 180°C (350°F) before frying.

For the Spicy Tomato Jam

  • 200 g cherry tomatoes, halved Burst with sweetness and acidity.
  • 2 tbsp sugar Balances the acidity of the tomatoes.
  • 1 tbsp apple cider vinegar
  • 1/2 tsp red chili flakes Adjust to taste for desired spice level.
  • 1/4 tsp garlic powder
  • Salt, to taste

For Serving

  • Toasted sourdough or bagel chips A delightful accompaniment.
  • Fresh basil or chives, for garnish Optional, adds freshness.

Instructions

Make the Spicy Tomato Jam

  • In a saucepan, combine the halved cherry tomatoes, sugar, apple cider vinegar, red chili flakes, garlic powder, and a pinch of salt. Stir the mixture and bring to a gentle simmer over low heat.
  • Allow it to bubble away for about 20–25 minutes, stirring occasionally until it becomes jammy and thick. Set aside to cool slightly.

Prep the Burrata

  • Gently pat the burrata dry using paper towels and then place it in the freezer for 10–15 minutes.
  • In a mixing bowl, combine panko breadcrumbs with everything bagel seasoning.

Bread the Burrata

  • Once the burrata has firmed up, roll it in flour, ensuring it’s evenly coated.
  • Dip it in the beaten egg, allowing any excess to drip off.
  • Coat the burrata liberally with the seasoned panko. Return to the freezer for another 10 minutes.

Fry the Bomb

  • Heat neutral oil to 180°C (350°F) in a deep skillet or frying pan.
  • Carefully lower the coated burrata bomb into the hot oil and fry for 45–60 seconds until golden brown and crispy.
  • Use a slotted spoon to remove it from the oil and place it on paper towels to drain.

Serve & Slice

  • Present the burrata bomb on a serving plate with a swirl of warm spicy tomato jam.
  • Garnish with fresh basil or chives if desired. Slice it open at the table to reveal the creamy filling.

Notes

You can prepare the spicy tomato jam in advance to save time. For variations, consider adding herbs like oregano or thyme to the panko mixture.
