Instructions

Preparation

  • Drain and rinse the chickpeas thoroughly, removing any excess starch and canned liquid.
  • In a large mixing bowl, combine the chickpeas, crumbled feta, dried cranberries, finely chopped red onion, fresh parsley, and optional toasted nuts.
  • Gently toss these ingredients together, being careful not to crush the chickpeas.

Making the Dressing

  • In a small bowl or jar, whisk together the olive oil, fresh lemon juice, honey or maple syrup, Dijon mustard, garlic powder, salt, and pepper.
  • Whisk until emulsified or shake in a jar. Adjust seasoning to taste.

Combining the Salad

  • Drizzle the lemon vinaigrette over the chickpea salad and gently toss everything together until well coated.

Notes
