Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  • In a skillet over medium heat, heat the olive oil and sauté the chopped onion until soft.
  • Add the sliced mushrooms, cooking until they release their juices and soften (about 5-7 minutes).
  • If using spinach, stir it in and cook until just wilted.
  • In a bowl, whisk together the eggs, cottage cheese, black pepper, and salt.

Combination

  • Fold the mushroom mixture and crumbled feta cheese into the egg mixture.
  • Pour the mixture into the prepared baking dish and spread evenly.

Baking

  • Bake for 30–35 minutes, or until set and lightly golden.
  • Allow to cool slightly before slicing into squares.
