Instructions

Preparation

  • Preheat your oven to 175°C (350°F). Grease and line two 6-inch round cake pans.
  • In a large mixing bowl, whisk together the whole wheat flour, ground flaxseeds, unsweetened cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, blend the mashed avocados, maple syrup, olive oil, vanilla extract, and almond milk until smooth.
  • Carefully mix the wet and dry ingredients until just combined. Divide the batter between the prepared pans and bake for 20–25 minutes.
  • Let the cakes cool completely in the pans.

Filling Preparation

  • Blend the filling ingredients until creamy. Chill the filling in the refrigerator for about 20 minutes.

Ganache Preparation

  • In a small saucepan, heat the coconut milk until warmed. Pour it over the chopped dark chocolate in a bowl and let sit for 2 minutes.
  • Stir until glossy, adding syrup for sweetness if desired.

Assembly

  • Spread the avocado filling between the cooled cake layers generously.
  • Pour the ganache over the top of the layered cake.
  • Chill the entire cake in the refrigerator for 30 minutes before serving.

Notes

Ensure avocados are ripe for best texture. Consider adding a splash of espresso to the batter for deeper flavor. To prevent the cake from doming, check oven temperature or use an oven thermometer.
