Ingredients

For the Pie Crust

  • 2 pieces pre-made pie crusts or homemade
  • 1 large egg for egg wash

For the Filling

  • 1 lb shrimp, peeled, deveined & chopped the star ingredient
  • 1/2 cup diced onion adds depth and sweetness
  • 3 cloves garlic, minced adds aromatic warmth
  • 1/2 cup diced bell pepper offers color and crunch
  • 1/2 cup chopped mushrooms optional for added umami
  • 3 tbsp unsalted butter adds richness
  • 1/4 cup all-purpose flour thickens the filling
  • 1 1/2 cups heavy cream or whole milk
  • 1/2 cup seafood or chicken broth adds flavor
  • 1 tsp Old Bay seasoning for signature coastal flavor
  • 1/2 tsp salt balances flavors
  • 1/4 tsp black pepper adds gentle kick
  • 1 tbsp lemon juice brightens the dish
  • 2 tbsp fresh parsley, chopped for freshness

Instructions

Preparation

  • Preheat the oven to 375°F (190°C). Roll out one pie crust into a 9-inch pie dish, fitting it nicely. Prick the bottom with a fork.
  • In a skillet, melt the butter over medium heat. Add the onion, garlic, bell pepper, and optional mushrooms. Sauté for 3-4 minutes until softened.

Filling

  • Sprinkle the flour over the vegetables and stir for 1 minute. Gradually whisk in the heavy cream and seafood broth, stirring until thickened.
  • Stir in the Old Bay seasoning, salt, black pepper, and lemon juice. Add the shrimp and cook for about 3 minutes until pink. Remove from heat and fold in parsley.

Assembly and Baking

  • Pour the shrimp filling into the prepared pie crust. Place the second crust over the filling, sealing edges, and cut slits for steam.
  • Brush the top with the beaten egg and bake for 35-40 minutes until golden brown. Let cool for 10 minutes before slicing.

Notes

Be careful not to overcook the shrimp. You can substitute other seafood such as crab or lobster, or use a lighter evaporated milk. Prepare filling in advance for easier assembly.
