Instructions

Preparation

  • Toast the pecans by heating a dry skillet over medium heat. Add the pecans and toast for about 3–4 minutes, stirring occasionally, until fragrant and slightly golden. Remove from heat and let cool.
  • In a small bowl, whisk together olive oil, balsamic vinegar, and honey until fully combined. Season with salt and freshly cracked black pepper to taste.

Assembling the Salad

  • In a large mixing bowl, layer fresh baby spinach as the base.
  • Top with blueberries, raspberries, and mandarin orange slices, spreading evenly.
  • Just before serving, sprinkle cooled toasted pecans and crumbled feta over the salad.
  • Drizzle the honey-balsamic dressing right before serving.

Notes

For added flavor, consider adding fresh herbs like mint or basil. Swap feta for goat cheese or leave it out for a dairy-free version. Keep dressing separate until ready to serve to avoid wilting greens.
