Ingredients

For the Lamb Chops

  • 5 pieces lamb loin chops Choose high-quality lamb for best results.
  • 2 tablespoons melted butter Ghee can be used for a Whole30 option.
  • 3 cloves garlic, finely chopped
  • 1 teaspoon chopped fresh thyme Can substitute with rosemary or oregano.
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

Preparation

  • Bring the lamb chops to room temperature by allowing them to sit at room temperature for 20 to 30 minutes.
  • Pat the lamb chops dry with paper towels and season both sides generously with kosher salt and freshly ground black pepper.

Cooking

  • Heat a cast-iron skillet over medium-high heat until hot.
  • Stand the lamb chops on their fat side and apply gentle pressure with tongs; render the fat for about 5 minutes.
  • Lay the lamb chops flat in the skillet and sear for 3 minutes on each side until nicely browned.
  • Reduce the heat to medium-low and carefully remove most of the fat from the pan.
  • Add the melted butter, chopped garlic, and fresh thyme to the pan; stir until the butter begins to foam, about 1 minute.
  • Baste the lamb chops with the garlic butter mixture for an additional minute.
  • Transfer the lamb chops to a plate, drizzle with garlic butter sauce, and serve hot.

Notes

Allow the meat to rest after cooking for juices to redistribute. Store leftovers in an airtight container for up to 3 days.
