Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Prepare your loaf pan by lightly greasing it or lining it with parchment paper.
  • In a large mixing bowl, combine the ground chicken, eggs, Parmesan, shredded mozzarella (for the inside), almond flour (or breadcrumbs), milk, minced garlic, chopped parsley, onion powder, Italian seasoning, and salt and pepper. Stir until mixed, being careful not to overwork it.
  • Transfer the mixture to your prepared loaf pan, smoothing out the top evenly.

Cooking

  • Bake uncovered for 30–35 minutes until the internal temperature reaches 165°F (74°C).
  • Remove the meatloaf from the oven, sprinkle the remaining mozzarella on top, and broil for an additional 3–5 minutes until the cheese is bubbly and golden brown.

Finishing

  • Let the meatloaf rest for about 10 minutes before slicing to help the juices redistribute.
  • Garnish with fresh parsley before serving.
