Ingredients

Vegetables and aromatics

  • 1 lb baby bok choy, chopped into bite-sized pieces

Instructions

Preparation

  • Wash the baby bok choy thoroughly under running water, then pat dry. Separate the leafy greens from the thicker white stems. Chop everything into bite-sized pieces.

Cooking

  • Heat the vegetable or sesame oil in a large skillet or wok over medium-high heat. Add the minced garlic, grated ginger, and half of the chopped scallions, and sauté for about 1 minute until fragrant.
  • Add the thicker white stems of the bok choy and cook for about 2-3 minutes until they start to soften. Then, add the leafy greens and continue stir-frying for another 2 minutes until they wilt.
  • In a small bowl, mix together the soy sauce, rice vinegar or lime juice, chili flakes, honey, and cornstarch slurry. Pour this sauce over the stir-fried bok choy and stir well to coat.
  • Let the sauce simmer for 1-2 minutes, allowing it to thicken. Sprinkle the stir-fry with toasted sesame seeds and the remaining chopped scallions before serving.

Notes

For additional flavor, consider adding a splash of sesame oil before serving. This recipe is customizable; feel free to add protein or other vegetables like bell peppers and mushrooms.
