  • 1 tsp rice vinegar Balances the sweetness with a dash of acidity.
  • 1 tsp sesame oil Adds complexity and richness.
  • 1 clove garlic, grated (optional) Provides an earthy depth.

Garnishes

  • Toasted sesame seeds Adds crunch and nutty flavor.
  • Sliced scallions Bright and fresh for garnish.

Instructions

Preparation

  • Slice the sweet potatoes lengthwise into thick steaks, about 2–3 cm thick.
  • Brush with olive oil and sprinkle with salt and pepper.

Roasting

  • Place the seasoned sweet potato steaks on a lined baking sheet and roast in an oven preheated to 200°C (400°F) for 25–30 minutes.
  • Halfway through, flip the steaks to ensure even cooking.

Making the Glaze

  • In a bowl, whisk together gochujang, maple syrup, soy sauce, rice vinegar, sesame oil, and grated garlic (if using).

Glazing

  • Once the sweet potatoes are roasted and tender, remove from the oven and brush each side generously with the glaze.

Final Roast

  • Return the glazed steaks to the oven for another 10–15 minutes, watching for the glaze to bubble and caramelize.

Serve

  • Serve hot, topped with toasted sesame seeds, scallions, and your choice of fresh herbs or crushed peanuts.
