Instructions

Roasting the Beets

  • Wrap golden and red beets in aluminum foil and roast in a preheated oven at 400°F (200°C) for 45–50 minutes until tender.
  • Allow the beets to cool, peel them, and slice into 1/2-inch thick rounds.

Building Your Stacks

  • Place a slice of golden beet on your serving dish as the base.
  • Add a spoonful of creamy burrata cheese on top of the beet.
  • Layer a slice of red beet followed by alternating between golden and red beets, finishing with burrata on top.

Finishing Touches

  • Sprinkle the top with toasted and chopped pistachios.
  • Drizzle with extra virgin olive oil and honey, then add orange zest, flaky sea salt, and black pepper.
