Ingredients

For the Stacks

  • 3 pieces golden beets, roasted and sliced into rounds Roast until tender
  • 2 pieces red beets, roasted and sliced into rounds Roast until tender
  • 1 ball fresh burrata cheese Torn into creamy pieces
  • 1/4 cup pistachios, toasted and coarsely chopped For topping
  • 1 tablespoon extra virgin olive oil For drizzling
  • 1 tablespoon honey
  • 1/2 teaspoon flaky sea salt To taste
  • 1/2 teaspoon freshly ground black pepper To taste
  • 1 piece orange zest Zest from one orange
  • to taste leaves fresh thyme leaves For garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wrap each golden and red beet in foil and place them on a baking sheet.
  • Roast the beets for about 45 to 50 minutes, or until tender enough to pierce with a fork. Let them cool before peeling and slicing into 1/2-inch thick rounds.

Assembly

  • Start your stacks with a slice of golden beet as the base.
  • Add a spoonful of creamy burrata on top of the golden beet.
  • Layer a slice of red beet on top and repeat until you have a stack, finishing with a dollop of burrata.

Garnishing

  • Sprinkle toasted pistachios over the stacks.
  • Drizzle with extra virgin olive oil and honey, then sprinkle with orange zest, flaky sea salt, and black pepper.

Serving

  • Garnish the stacks with fresh thyme leaves and serve immediately.

Notes

For more flavor, consider adding lemon juice or chili flakes. You can prepare roasted beets in advance and assemble right before serving for best results.
