Instructions

Preparation

  • Caramelize the beets: Melt the butter in a small pan over medium heat, add the grated beet and honey, and cook for 3-5 minutes until softened.
  • Let the caramelized beet mixture cool completely.
  • Cream the softened butter and powdered sugar in a bowl until light and airy. Incorporate vanilla extract and salt.
  • Gradually mix in the flour until a soft dough forms, and fold in cranberries and cooled beets.
  • Roll the dough into a log, wrap in plastic wrap, and refrigerate for at least one hour.

Baking

  • Preheat the oven to 350°F (175°C).
  • Slice the chilled dough into 1/4-inch rounds and place on a parchment-lined baking sheet.
  • Sprinkle with coarse sugar if desired and bake for 12-15 minutes or until edges are lightly golden.

Cooling & Garnishing

  • Let the cookies cool completely on a wire rack before drizzling with melted white chocolate if using.

Notes

Chill the dough to prevent spreading. Keep an eye on baking times, the cookies should be golden at the edges but soft in the center.
