Instructions

Preparation

  • Heat oven to 425°F and line a baking tray. Preheat your oven while you prep your potatoes.
  • Boil potatoes in salted water for 8 minutes, then drain and let cool.
  • Dry potatoes and place on tray. Smash each with a glass.

Cooking

  • Brush with olive oil, season with salt and pepper.
  • Roast for 45–60 minutes, flipping halfway through.

Sauce Preparation

  • Mix yogurt, mayo, Dijon, lemon juice, garlic, parsley, pickle, and shallot. Season to taste and chill.

Serving
