Instructions

Preparation

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until they soften.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the diced sweet potatoes, smoked paprika, oregano, salt, and pepper. Cover and cook for about 10 minutes, stirring occasionally.
  • Once the sweet potatoes are soft, stir in the diced zucchini. Cook for another 5 minutes until tender.
  • Remove from heat and garnish with fresh parsley. Serve warm.

Notes

For added flavor, feel free to swap in other veggies you have on hand. This dish can also be made with ground turkey or chicken for a lighter option.
