Instructions

Preparation

  • Preheat the grill to medium-high heat or the oven to 400°F (200°C).
  • Cut 4 sheets of aluminum foil, approximately 12 inches long.
  • Divide the chicken, pineapple, bell peppers, and onion evenly onto each sheet.
  • Drizzle each packet with olive oil and sprinkle salt and pepper to taste.
  • Add 2 tablespoons of BBQ sauce to each packet and toss gently to coat.

Cooking

  • Fold the edges of the foil tightly around the mixture to seal well.
  • Place the foil packets on the grill or in the preheated oven.
  • Cook for 15–18 minutes on the grill or 20–22 minutes in the oven.

Serving

  • Carefully open the foil packets and garnish with chopped green onions or cilantro.
  • Serve over rice for a complete meal.

Notes

Marinate the chicken in BBQ sauce for richer flavor if time permits. Feel free to experiment with different vegetables. These packets can be prepared in advance.
