Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat 1/2 tablespoon of olive oil over medium heat. Add the chopped mushrooms, diced onion, and minced garlic. Sauté until the mushrooms are soft, about 5-7 minutes.
  • Remove from heat and mix in softened cream cheese, mozzarella, Parmesan, and thyme or Italian seasoning. Stir until well combined.
  • Take each chicken breast and carefully cut a pocket into the side.
  • Generously fill each pocket with the warm mushroom mixture.
  • Secure the opening using toothpicks or kitchen twine.
  • Drizzle the remaining 1 tablespoon of olive oil over the chicken breasts and season with garlic powder, onion powder, salt, and pepper.

Cooking

  • Place the stuffed chicken on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes or until the chicken is cooked through and registers an internal temperature of 165°F (75°C).
  • Broil for the last few minutes for a golden, crispy top.
  • Allow to rest for a few minutes before slicing and serving.
