Instructions

Preparation

  • In a mixing bowl, combine your cubed beef with flour, salt, and pepper. Ensure each piece is well-coated.
  • Heat vegetable oil in a large pot over medium-high heat. Add the beef in a single layer and sear until browned on all sides. Remove the beef and set it aside.

Cooking

  • In the same pot, add the chopped onion and minced garlic. Sauté until soft and fragrant, about 3 minutes.
  • Add the seared beef back along with the carrots, potatoes, celery, diced tomatoes, beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir well.
  • Cover the pot and reduce heat to low. Allow the stew to simmer for 1.5 to 2 hours, stirring occasionally.
  • Stir in the frozen peas during the last 10 minutes of cooking. Adjust seasoning with salt and pepper as needed.

Assembly

  • Slice the tops off the bread loaves and hollow them out gently. Optionally brush the inside with softened butter and toast in a preheated oven at 350°F (175°C) for about 5 minutes.
  • Ladle the hot stew into the prepared bread bowls and garnish with freshly chopped parsley. Enjoy while warm!

Notes

For richer flavor, consider marinating the beef prior to cooking. Swap veggies based on what's available. If you prefer thicker stew, mix a tablespoon of cold water with flour and stir it in during the last few minutes of cooking.
