Peanut Butter Filling

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Mix Dry Ingredients

  • In a large bowl, whisk together all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients

  • In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract. Gradually add this mixture to your dry ingredients, blending until smooth.
  • Stir in the boiling water until well incorporated.

Bake the Cake

  • Pour the batter into the prepared cake pan and bake for 30-35 minutes. Check for doneness with a toothpick.
  • Allow it to cool completely in the pan on a wire rack.

Prepare Peanut Butter Filling

  • Beat together creamy peanut butter, powdered sugar, softened butter, and heavy cream until smooth and creamy.

Create the Chocolate Ganache

  • Heat the heavy cream in a small saucepan until simmering. Remove from heat and add the chocolate chips and butter. Stir until smooth.

Assemble the Cake

  • Spread the peanut butter filling evenly over the top of the cooled cake.
  • Pour the chocolate ganache over the peanut butter layer and spread evenly. Allow to set before serving.

Notes

Mix well but avoid overmixing to keep the cake light and fluffy. Prepare ganache and filling ahead of time and refrigerate if needed. Add a pinch of sea salt on top of ganache for a sweet-salty contrast. Experiment with different nut butters for a unique flavor.
