Instructions

Preparation

  • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press firmly into the bottom of the pan.
  • In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar until smooth. Gradually add sour cream, mixing well. Incorporate eggs one at a time. Stir in vanilla extract, chopped strawberries, and mashed banana.
  • Pour the cheesecake batter over the crust, spreading evenly.
  • Bake for 50-60 minutes or until the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for an hour.
  • Remove from the oven and let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  • For the topping, combine sliced strawberries, sliced banana, 2 tablespoons of sugar, and lemon juice. Mix gently and let macerate.
  • Spoon the strawberry-banana mixture over the chilled cheesecake before serving.
