Ingredients

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large mixing bowl, combine chicken thighs, olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and oregano. Mix well and marinate for at least 1 hour or overnight.

Cooking

  • Cut an onion in half and place the flat side down on a baking sheet lined with parchment paper. Insert two wooden skewers into each half to create a skewer support.
  • Layer the marinated chicken thighs onto the skewers, ensuring even stacking. Pour water or chicken stock into the base for a moist environment.
  • Cover with foil if needed and bake for 75 to 90 minutes until cooked through (internal temperature should reach 165°F/74°C).
  • Let the chicken rest briefly before slicing thinly.

Notes

Marinate longer for deeper flavor; serve with tzatziki sauce. Opt for high-quality olive oil and fresh herbs for impact.
