For the Ice Cream Base

  • 1 1/2 cups heavy cream (extra) For added creaminess in the final mix.

Instructions

Infusion

  • In a medium saucepan, combine the whole milk, extra heavy cream, honey, and dried lavender buds. Heat the mixture over medium heat until it just starts to simmer, then remove it from the heat. Allow the lavender to steep in the milk for about 20 minutes to fully release the floral notes.

Custard Preparation

  • After steeping, strain the mixture through a fine mesh sieve to remove the lavender buds. Return the infused milk mixture to the saucepan. In a separate bowl, whisk together the egg yolks and granulated sugar until they turn pale and thick.
  • Gradually whisk the warm milk mixture into the egg yolks, ensuring you do this slowly to avoid curdling. Once combined, return the mixture to the saucepan.
  • Cook over low heat, stirring constantly until the custard thickens enough to coat the back of a spoon, which should take about 5-7 minutes.
  • Remove from heat and stir in the vanilla extract and optional food coloring. Strain the custard into a clean bowl to ensure a smooth texture, then cover and cool in the refrigerator for at least four hours or preferably overnight.

Churning

  • Once the custard is sufficiently chilled, churn it in an ice cream maker according to the manufacturer’s instructions. After churning, transfer the ice cream to a container and freeze for at least 2 hours before serving.

Notes

Use fresh lavender for more vibrant flavor, and consider serving with toppings such as a drizzle of honey or crushed lavender. Do not bring the milk mixture to a full boil to avoid scalding.
