Ingredients

For the Chicken Marinade

  • 1.5 lbs chicken breasts or thighs, boneless & skinless Tender cuts for marinating
  • 3 tbsp honey Adds sweetness
  • 2 tbsp olive oil Heart-healthy fat
  • 2 ct limes, juice + zest Provides tartness
  • 2 cloves garlic, minced For aromatic flavor
  • 1 tsp ground cumin Gives warmth
  • 0.5 tsp smoked paprika Adds depth
  • Salt and black pepper To taste

For the Rice

  • 1 cup basmati or jasmine rice Fluffy and fragrant
  • 2 cups water or chicken broth Liquid for cooking
  • 1 tbsp fresh lime juice For flavor
  • 1 tbsp fresh cilantro, chopped For freshness
  • Pinch of salt To season

For the Avocado

  • 2 ct ripe avocados, diced Adds creaminess
  • 1 tbsp lime juice Preserves color
  • Pinch of salt To enhance flavor

Optional Toppings

Instructions

Prepare the Marinade

  • In a mixing bowl, whisk together the honey, lime zest, lime juice, olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper until well combined.

Marinate the Chicken

  • Place the chicken into the marinade, ensuring they are fully coated. Marinate for 15–20 minutes.

Cook the Chicken

  • Heat a skillet or grill over medium-high heat. Cook marinated chicken until fully done and golden brown, about 6-7 minutes on each side.
  • Allow the chicken to rest, then slice into bite-sized pieces.

Cook the Rice

  • In a saucepan, combine rice and water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer until tender, about 15–20 minutes.
  • Stir in fresh lime juice, cilantro, and a pinch of salt.

Prepare the Avocado

  • In a small bowl, gently toss diced avocados with lime juice and pinch of salt.

Assemble Your Stack

  • Start with lime-cilantro rice as the base, add diced avocado, and arrange sliced chicken on top.

Add Optional Toppings

  • Sprinkle with crumbled cheese, diced tomatoes, fresh cilantro, and serve with lime wedges.

Notes

For tender chicken, pound it to an even thickness before marinating. Use chicken broth for added flavor in rice. Consume dish shortly after preparing to avoid browning of avocados.
