Ingredients

For the Whipped Feta

For the Brussels Chips

  • 250 g Brussels sprouts (outer leaves only) Fresh and nutritious, these leaves turn crispy with roasting.
  • 1 tbsp olive oil (for Brussels) Helps achieve that perfect golden crisp.
  • Salt to taste To enhance flavors.

Instructions

Prep the Leaves

  • Trim the stems of the Brussels sprouts and carefully peel away the outer leaves. Toss the leaves in olive oil, salt, and your choice of seasoning.

Roast the Crunch

  • Spread the seasoned leaves in a single layer on a parchment-lined baking tray. Roast in a preheated oven at 180°C (355°F) for 10-12 minutes, shaking the tray halfway through.

Whip the Feta

  • In a blender or food processor, combine crumbled feta, Greek yogurt, olive oil, lemon juice, lemon zest, and seasoning. Blend until smooth and airy, then chill until ready to serve.

Make the Hot Honey

  • Warm the honey in a small saucepan or microwave, then stir in chili flakes and smoked paprika. Allow to infuse for 5-10 minutes.

Assemble the Bite

  • Spoon the whipped feta into a shallow bowl, create a swirl on top, and drizzle the hot honey over it. Serve with crispy Brussels leaves on the side.
