Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  • In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in the key lime juice, key lime zest, and vanilla extract until well blended.
  • Gradually add the flour mixture and buttermilk, starting and ending with the flour, until just combined.

Baking

  • Divide the batter evenly between the three prepared pans. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in their pans for about 10 minutes before transferring to wire racks to cool completely.

Frosting and Assembly

  • Beat the softened cream cheese and butter until smooth and fluffy. Gradually add powdered sugar, then mix in lime juice and vanilla extract.
