Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  • In a large mixing bowl, combine the ground beef (or chicken), chopped green onions, minced garlic, grated ginger, egg, breadcrumbs, soy sauce, gochujang, brown sugar, sesame oil, salt, and black pepper.
  • Mix the ingredients thoroughly and roll the mixture into 1.5-inch meatballs, arranging them on the baking sheet.

Cooking

  • Bake the meatballs for 18-20 minutes or until browned and cooked through, optionally broiling for an extra 2 minutes.
  • While the meatballs are baking, prepare the spicy mayo by mixing mayonnaise, sriracha, rice vinegar (or lime juice), and sugar in a small bowl.

Serving

  • Serve the meatballs hot, drizzled or dipped in the spicy mayo, and garnish with sesame seeds and scallions.

Notes

To keep meatballs tender, do not overmix. For lighter options, use lean ground turkey or chicken. Allowing the mixture to rest in the fridge before baking helps meld flavors.
