Instructions

Preparation

  • Begin by slicing the roasted and peeled beets into thin, even rounds, approximately 1/8-inch thick.
  • In a small bowl, whip the goat cheese with heavy cream and honey until it’s smooth and fluffy.
  • Add a pinch of salt and pepper for seasoning, and then transfer this mixture into a piping bag.

Assembling the Stack

  • On a serving plate, place one slice of beet at the center. Pipe or spread a layer of the whipped goat cheese on top.
  • Sprinkle with a few pieces of chopped candied walnuts, and continue layering with more beet slices and goat cheese.
  • Finish the stack with a drizzle of balsamic glaze over it.
  • Top with crushed pistachios and garnish with fresh thyme leaves.

Notes

To lighten the dish, consider using low-fat cream cheese or Greek yogurt instead of goat cheese. Be careful with seasoning to not overpower the natural sweetness of the beets.
