  • 4 fillets salmon fillets (5 oz each), skinless Tender, juicy, and full of flavor.

Instructions

Preparation

  • Preheat the oven to 425°F (218°C).
  • Gently season the salmon fillets with salt and pepper.
  • In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped basil, lemon zest, and a pinch of salt and pepper. Mix well.

Assembly

  • Spread a generous amount of the ricotta mixture over each salmon fillet. Lay 2-3 asparagus spears across the center of each fillet.
  • Carefully roll the salmon up tightly, starting from the wider end, and place each rolled fillet seam-side down on a greased baking sheet.

Cooking

  • Bake the salmon rolls in the preheated oven for 15–20 minutes, until the salmon is cooked through.
  • While the salmon is baking, melt the butter in a small saucepan over medium heat. Add the chicken broth and lemon juice, stirring to combine.
  • Gradually stir in the cornstarch-water mixture and cook for an additional 3–5 minutes until the sauce thickens.

Serving

  • Once the salmon rolls are done baking, drizzle the warm lemon sauce over the top and serve.

Notes

Use wild-caught salmon for better flavor. Experiment with herbs like dill or parsley. Adjust lemon zest and juice to your taste preference.
