  • 1 bunch fresh asparagus Provides crunch and complements the salmon.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Trim the woody ends of asparagus and arrange them on a lined baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  • In a separate bowl, mix ricotta or cream cheese, lemon zest, minced garlic, chopped basil, salt, and pepper until smooth.
  • Spread 1-2 tablespoons of the filling across the center of each salmon fillet.
  • Carefully roll each fillet up, placing seam-side down on top of the asparagus.
  • Drizzle lemon juice and additional olive oil over the salmon rolls.

Cooking

  • Bake for 18-20 minutes or until the salmon is cooked through and lightly golden.
  • Garnish with fresh basil and lemon wedges before serving.

Notes

Ensure your salmon is fresh for the best flavor. Consider adding sun-dried tomatoes or Parmesan cheese to the filling for variation. Serve with a refreshing salad or light grains, and pair with white wine or sparkling water.
