Ingredients

For the Salmon and Marinade

  • 4 pieces salmon fillets (6 oz each) Juicy and rich, these fillets are the star of your dish.

  • 0.5 tsp salt (plus 1/2 tsp for tomatoes) Essential for balancing flavors.
  • 0.25 tsp black pepper (plus 1/4 tsp for tomatoes) A subtle kick.

For the Roasted Tomatoes

  • 2 pints cherry tomatoes Sweet and succulent.

For the Pasta

  • 12 oz linguine (or preferred pasta) Ideal base for the dish.
  • 1 tbsp butter (optional) For a creamy finish.
  • 0.25 cup grated Parmesan cheese Adds nuttiness and creaminess.
  • 1 tbsp capers, drained (optional) Brings unique flavor notes.
  • 0.5 cup reserved pasta water Helps create the perfect sauce.

Instructions

Preparation

  • In a bowl, mix together 2 tablespoons of olive oil, fresh lemon juice, 1 1/2 cloves of minced garlic, chopped basil, lemon zest, salt, and black pepper. Brush the mixture onto the salmon fillets generously and marinate for about 15 minutes.

Roasting

  • Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with 1 tablespoon of olive oil, remaining minced garlic, oregano, salt, and black pepper in a baking dish. Spread the seasoned tomatoes out evenly. Place the salmon and tomatoes on separate trays.
  • Roast the tomatoes for 15 to 20 minutes, or until they burst and become caramelized. Roast the salmon for 12 to 15 minutes, or until it flakes easily with a fork.

Cooking the Pasta

  • Bring a pot of salted water to a boil. Add the linguine and cook until al dente, about 8-10 minutes depending on the package instructions. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.

Combining Everything

  • In a large skillet, combine the cooked pasta with the roasted tomatoes and their juices. If using butter, add it at this stage. Mix in the reserved pasta water until the desired consistency is achieved.

Finishing the Dish

  • Remove the skillet from heat. Mix in the grated Parmesan cheese, chopped basil, and optional capers. Serve the pasta topped with a piece of salmon, garnished with fresh basil and lemon wedges.

Notes

Marinate the salmon well for deep flavors. Roast tomatoes until they burst, and use reserved pasta water for a silky sauce. Feel free to add other veggies like zucchini or bell peppers for extra nutrition.
