Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with foil or parchment paper.
  • Gently remove the stems and gills from each Portobello mushroom cap.
  • In a large mixing bowl, combine chopped lobster meat, breadcrumbs, mayonnaise, lemon juice, Old Bay seasoning, Gruyère cheese, and chopped chives. Stir until well combined.
  • Generously fill each mushroom cap with the lobster mixture.

Baking

  • Place the stuffed mushrooms on the prepared baking sheet and bake for 18–20 minutes.
  • For an extra crisp, broil for an additional 1–2 minutes, watching closely.

Choose firm, unblemished Portobello caps for the best flavor. You can substitute lobster with crab meat or shrimp if unavailable. Experiment with different cheeses or add herbs for flavor enhancement.
