Ingredients

For the gnocchi

  • 500 g cooked starchy potatoes (peeled & mashed) Use starchy potatoes for the best texture.
  • 1 large egg yolk This adds richness and binds the ingredients.
  • 120 g all-purpose flour (plus extra for dusting) Essential for shaping the gnocchi.
  • 1/2 tsp salt Enhances all ingredients.
  • 125 g burrata cheese (drained well and chopped) The creamy surprise in the gnocchi.
  • 1 tbsp grated Parmesan Adds a nutty flavor.

For the sauce

  • 1 tbsp olive oil Adds smooth mouthfeel.
  • 2 cloves garlic, minced Releases wonderful aromas.
  • 1/2 tsp chili flakes (optional) For a hint of heat.
  • 150 ml heavy cream Creates a velvety sauce.
  • 40 g sun-dried tomatoes, chopped Adds a burst of flavor.
  • 30 g grated Parmesan For finishing touches.
  • to taste salt & pepper Season to perfection.
  • fresh basil for garnish Adds freshness and color.

Instructions

Preparation

  • In a large bowl, combine mashed potatoes, egg yolk, salt, and all-purpose flour. Mix until a soft dough forms.
  • Divide the dough into small balls, flatten slightly, fill with burrata-Parmesan mixture, and roll into sealed dumplings.

Cooking

  • Bring a large pot of salted water to a gentle simmer. Drop in filled gnocchi and cook until they float, about 2-3 minutes.
  • In a large pan, heat olive oil and sauté minced garlic until fragrant. Add chili flakes, then stir in heavy cream and sun-dried tomatoes, simmer for 3-4 minutes.
  • Mix in the grated Parmesan and season with salt and pepper until the sauce is glossy.
  • Toss the cooked gnocchi in the sauce to coat.
  • Plate the gnocchi, garnish with basil, a drizzle of olive oil, and extra Parmesan if desired.
