  • 1 tsp dried oregano earthy and herbaceous, a classic component of Mediterranean cuisine.
  • 1 tsp smoked paprika adds a dash of warmth and a hint of smokiness.
  • 100 g sun-dried tomatoes in oil, finely chopped bursts of sweet-tangy flavor, adding complexity.
  • 500 ml vegetable or chicken broth the savory base that brings everything together.
  • 150 ml heavy cream or coconut cream enriching the dish with its velvety texture.
  • 2 tbsp tomato paste contributes a concentrated tomato flavor to deepen the profile.

Instructions

Preparation

  • Preheat your oven to 200°C (390°F). In an ovenproof skillet or deep baking dish, add the orzo, minced garlic, chili flakes (if using), dried oregano, smoked paprika, and sun-dried tomatoes. Drizzle in your tomato paste and broth, stirring well until everything is combined in a fragrant medley.
  • Now, place the block of feta in the center of your mixture. Drizzle everything generously with your olive oil, ensuring it coats the ingredients evenly. Cover the dish with foil and pop it into the preheated oven.
  • Bake for 25 minutes, allowing the delightful aromas to envelop your kitchen.
  • Carefully remove the foil. Pour in the heavy cream (or coconut cream) and give it a gentle stir. Return the dish to the oven uncovered and bake for another 10 minutes, allowing the feta to melt and the sauce to thicken.
  • Take a moment to stir again, tasting and seasoning with salt and pepper as needed. Finish by topping with fresh chopped herbs and, if you like, a sprinkle of lemon zest or additional chili flakes for a bright finish.
  • Serve this heavenly dish warm and gooey, spooning it into bowls while it’s hot and creamy, alongside some crusty bread to soak up all that deliciousness!

Notes

For optimal results, keep an eye on the feta as it bakes—you want it to soften and melt but not completely disintegrate. Consider using high-quality feta for an unforgettable burst of flavor. Experimenting with the amount of garlic or spices can also customize the dish to your taste preferences.
