Ingredients

For the Meatballs

For the Roasted Vegetables

For the Rice

Instructions

Prepare the Meatballs

  • In a mixing bowl, combine the ground turkey, breadcrumbs, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix until just combined.
  • Form the mixture into small meatballs, roughly one inch in size.
  • Heat a tablespoon of olive oil in a large skillet over medium heat. Once hot, add the meatballs and cook for about 10 to 12 minutes, turning frequently.
  • Ensure they are cooked through with no pink in the center.

Roast the Vegetables

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, toss sweet potatoes, zucchini, bell pepper, and onion with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  • Spread the veggies on a lined baking sheet and roast for 20 to 25 minutes, flipping halfway through.

Cook the Rice

  • Rinse the rice under cold water to remove excess starch.
  • In a medium pot, bring water and a pinch of salt to a boil. Add the rinsed rice, stir, reduce heat to low, cover, and simmer for about 15 minutes.
  • Let it sit covered for an additional 5 minutes after removing from heat.

Assemble & Serve

  • Divide the rice into serving bowls, top with roasted vegetables and meatballs, and serve warm.

Notes

Consider using different herbs for the meatballs or swapping the turkey for lean beef or a plant-based alternative. Customize vegetables based on preference or seasonal availability.
