Ingredients

For the Sandwich

  • 4 slices sourdough or rustic bread Offers a hearty and chewy texture, perfect for toasting.
  • 2 tbsp butter, softened A rich layer that crisps the bread beautifully.
  • 1 tbsp olive oil Adds a fruity flavor and helps sauté the veggies.
  • 1 cup fresh spinach, chopped Provides freshness and a pop of color.
  • 1/2 cup sun-dried tomatoes, chopped Contributes a surprisingly sweet and tangy flavor.
  • 1/2 tsp garlic powder Adds a warm, savory note to the filling.
  • 1/2 tsp dried oregano Infuses a hint of aromatic earthiness.
  • 1 cup mozzarella cheese, shredded Melts beautifully and adds stretch to the sandwich.
  • 1/2 cup feta cheese, crumbled Offers a tangy and creamy component.
  • 1/2 cup sharp cheddar cheese, shredded Adds a bit of bite and depth.

Instructions

Preparation

  • Begin by heating olive oil over medium heat in a pan. Add in the chopped spinach, sun-dried tomatoes, garlic powder, and oregano. Sauté for about 2 minutes until the spinach wilts down, releasing its vibrant color and flavor. Remove from heat and set aside.

Assembly

  • Take your softened butter and spread it generously on one side of each slice of bread.
  • Start with one slice of bread, buttered side down. Layer on the mozzarella, feta, and cheddar cheeses generously, following with the sautéed spinach and sun-dried tomato mixture. Top with another slice of bread, buttered side facing up.

Grilling

  • Heat a skillet over medium-low heat. Carefully place your assembled sandwich onto the skillet. Cook each side for about 3-4 minutes until the bread is golden brown and the cheese has melted, creating that glorious gooey center. Press lightly with a spatula for even crispness.

Serving

  • Once done, slice the sandwich diagonally and serve immediately. Enjoy this golden treat while the cheese is oozy and melty!

Notes

For an extra layer of flavor, consider adding roasted red peppers or artichokes to the filling. A sprinkle of crushed red pepper flakes will give your sandwich a spicy kick! If grilling multiple sandwiches, keep them warm in an oven set to low heat while finishing the rest.
