Ingredients

For the Dough

Instructions

Dough Preparation

  • In a mixing bowl, combine 1.5 cups of self-rising flour and 3/4 cup of Greek yogurt. Mix until the ingredients are incorporated.
  • Gently knead the dough for about 5 minutes until it is smooth and elastic.
  • Cover the dough with a damp cloth or plastic wrap, and let it rest for about 30 minutes.

Filling Preparation

  • In a separate bowl, mix together the wilted and chopped spinach, crumbled feta cheese, 2 tablespoons of cream cheese, minced garlic, chopped mint, and ground black pepper.

Assembling the Flatbreads

  • Once the dough has rested, split it into 4 equal balls.
  • On a floured surface, flatten each ball of dough into a disc, approximately 1/4 inch thick. Place a generous spoonful of the filling in the center of each disc.
  • Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal.

Cooking

  • Heat a dry non-stick frying pan over medium heat. Cook each flatbread for 3–5 minutes on each side, or until golden brown.

Serving

  • Serve the warm flatbreads immediately with a mint sauce mixed with 1 tablespoon of olive oil on the side for dipping.

Notes

Resting the dough is crucial; it improves the texture significantly. Customize the filling with sun-dried tomatoes or olives for added flavor.
