  • 2 cans (6 oz each) of salmon, drained and flaked Packed with protein and healthy fats.
  • 1 cup of fresh spinach, finely chopped and sautéed Adds vibrant color and essential vitamins.
  • 1/4 cup of red onion, finely diced Provides a bit of sharpness.
  • 2 cloves of garlic, minced Brings aromatic complexity.
  • 1/3 cup of crumbled feta cheese Introduces a creamy, tangy element.
  • 1/2 cup of breadcrumbs Helps bind the patties.
  • 2 large eggs, lightly beaten Acts as a binding agent.
  • 2 tablespoons of fresh parsley, finely chopped Adds freshness.
  • 1 tablespoon of fresh dill, minced (optional) Adds a unique herbal kick.
  • 1 tablespoon of fresh lemon juice Enhances flavors.

Instructions

Preparation

  • Drain and flake the salmon into small pieces using a fork.
  • In a skillet, sauté the finely chopped spinach over medium heat for about 2 minutes until wilted, cool and squeeze out the moisture.
  • In a large bowl, mix together flaked salmon, sautéed spinach, diced red onion, minced garlic, crumbled feta, breadcrumbs, beaten eggs, chopped parsley, optional dill, lemon juice, lemon zest, oregano, salt, and pepper until well combined.
  • Form the mixture into 6 to 8 patties and refrigerate for 10 to 15 minutes.

Cooking

  • Heat olive oil in a skillet over medium heat. Add the salmon patties and cook for 3 to 4 minutes on each side until golden brown.

Serving

  • Serve warm, garnished with fresh lemon wedges and tzatziki sauce if desired.

Notes

Chill patties before frying to help them hold together. Experiment with additional spices or bake for a healthier option.
