Ingredients

For the filling

  • 2 cups fresh spinach leaves Sautéed before adding to sandwich
  • 1/2 cup crumbled feta cheese
  • 1/4 cup shredded cheddar cheese Sharply flavored cheese recommended
  • 6-8 pieces sun-dried tomatoes, finely chopped
  • a pinch dried oregano
  • a pinch crushed red chili flakes Adjust to taste

For the bread

  • 4 slices favorite bread (sourdough, whole grain, or rustic white) Choose your favorite type
  • 1/2 tablespoon extra virgin olive oil For sautéing spinach
  • 2 tablespoons softened butter For grilling sandwiches

Instructions

Preparation

  • Heat the olive oil in a non-stick pan over medium heat. Add the fresh spinach and sauté for about 5–6 minutes until wilted.
  • Add a pinch of sea salt, mix well, and transfer the sautéed spinach to a plate.

Assembling the Sandwich

  • Spread softened butter on one side of each slice of bread.
  • Place two slices of bread, butter-side down, into the hot pan.
  • Evenly distribute the chopped sun-dried tomatoes over the bread.
  • Layer half of the crumbled feta and half of the shredded cheddar over the tomatoes.
  • Add the sautéed spinach on top, followed by the remaining feta and cheddar.
  • Sprinkle with dried oregano and crushed red chili flakes.

Cooking

  • Place the remaining two slices of bread on top, butter-side up.
  • Cook over medium heat for about 5 minutes, or until the bottom is golden and crispy.
  • Carefully flip each sandwich and cook the other side for another 5 minutes, until the bread is beautifully toasted and the cheese has melted.

Serving

  • Serve immediately, optionally garnished with extra oregano and chili flakes or a drizzle of honey.

Notes

Use high-quality ingredients for the best flavor. You can customize with olives or artichokes, and for vegan options, substitute with dairy-free cheese.
