Instructions

Preparation

  • Start by lightly rolling out your thawed puff pastry on a clean surface.
  • In a small bowl, combine the poppy seeds, lemon zest, granulated sugar, and vanilla extract.
  • Cut the pastry into strips, approximately 2 cm wide, and roll each strip into a tight spiral, pinching one end to create a flower shape.
  • Chill the shaped blossoms in the fridge for about 10 minutes.

Cooking

  • In a deep pan, heat the neutral oil to 175°C (350°F).
  • Carefully place the chilled blossoms into the hot oil in small batches, frying for 1-2 minutes on each side until golden brown.
  • Remove them with a slotted spoon and drain on paper towels.
  • While still warm, toss the fried pastries in a mix of granulated sugar and vanilla seeds.

Custard Preparation

  • In a saucepan, whisk together the egg yolks, cornstarch, and sugar.
  • Gradually add the whole milk while whisking to avoid lumps. Incorporate the lemon zest and juice, and cook over medium heat until thickened.
  • Remove from heat and whisk in the unsalted butter until smooth.

Serving

  • Present the warm Mini Lemon-Poppy Blossoms alongside your luscious lemon custard.

Ensure oil is hot enough before frying and do not overcrowd the pan for optimal crispiness.
