Ingredients

For the Zucchini Crust

  • 2 large zucchinis, sliced into 1⁄2-inch thick rounds
  • 1 tbsp olive oil For brushing the zucchini
  • 1/2 tsp garlic powder For seasoning
  • 1/2 tsp Italian seasoning For seasoning

For the Toppings

  • 1/2 cup pizza sauce
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 12 slices pepperoni or other toppings Optional
  • 1 tbsp fresh basil or parsley, chopped For garnish

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Arrange zucchini slices on the prepared baking sheet and lightly brush them with olive oil.
  • Sprinkle the slices with garlic powder and Italian seasoning.
  • Bake the zucchini in the oven for 5 minutes until slightly softened.
  • Spread a spoonful of pizza sauce over each zucchini slice.
  • Sprinkle mozzarella and Parmesan cheese over the sauced zucchini rounds.
  • Add pepperoni slices or any other toppings you prefer.

Baking

  • Return the zucchini pizzas to the oven and bake for an additional 5–7 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and sprinkle with fresh basil or parsley before serving.

Notes

For best results, salt the zucchini slices beforehand for extra crispiness. You can also experiment with different cheeses or add a balsamic glaze before serving for added flavor.
