Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a 15x10 inch jelly roll pan with parchment paper.
  • In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  • In a large bowl, beat the eggs and granulated sugar together until the mixture thickens and turns pale, about 2-3 minutes. Stir in the vanilla extract and vegetable oil.
  • Gradually add the dry ingredients to the egg mixture, alternating with the milk. Mix until just combined.
  • Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes until it springs back when lightly touched.
  • Turn the cake onto a clean kitchen towel dusted with powdered sugar and roll it up in the towel. Allow it to cool completely.

Making the Cookie Dough

  • In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy. Mix in the vanilla extract and milk.
  • Gradually add the flour and stir until combined. Fold in the mini chocolate chips and mini M&M's.

Assembly

  • Once the cake is cool, unroll it gently and spread a layer of cookie dough over the surface.
  • Spread softened vanilla ice cream over the cookie dough layer evenly.
  • Re-roll the cake tightly to avoid air pockets.
  • Wrap the cake roll in plastic wrap and place it in the freezer for at least 4 hours until firm.
