Ingredients

Onion Rings

  • 2 large large white onions, sliced into thick rings
  • 1 block mozzarella cheese, cut into strips

Coating

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1.5 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Frying and Garlic Butter

  • Vegetable oil for frying
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Pinch salt
  • Fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Separate the onion slices into rings, matching similar sizes for even cooking. Sandwich a strip of mozzarella between two onion rings and press gently to hold the cheese inside.
  • Coat each assembled ring first in flour, then in beaten egg, and finally in panko breadcrumbs mixed with garlic powder, salt, and pepper.
  • Once all rings are coated, place them on a baking sheet and freeze for 30 minutes.

Cooking

  • Heat vegetable oil in a deep skillet to 350°F (175°C). Fry the rings in batches for 2-3 minutes on each side until golden brown.
  • Drain the fried rings on paper towels.

Making Garlic Butter

  • In a separate pan, melt the unsalted butter over medium heat. Add minced garlic and sauté for about one minute until fragrant.

Serving

  • Brush the hot, crispy onion rings with the garlic butter and garnish with freshly chopped parsley. Serve immediately.

Notes

For extra crunch, consider adding crushed cornflakes to the breadcrumb mixture. To keep fried rings warm, place them in the oven at low temperature until ready to serve.
