Ingredients

For the Stew

  • 1 lb beef Tender and juicy cuts for a hearty base.
  • 1.5 cups water Essential for boiling the beef to perfection.

  • 1/2 teaspoon salt Enhances the overall flavors.

  • 1 habanero pepper habanero pepper A touch of heat, adjustable to taste.
  • 1 onion onion (divided) Half for blending and half for sautéing.

  • 1/2 cup beef stock or broth To enrich the stew and create the perfect consistency.
  • 1 tablespoon bouillon powder Intensifies the beef flavor.
  • 1/2 teaspoon thyme For a herby note that balances the dish.
  • 1/2 teaspoon curry powder A fragrant spice that adds warmth.

Instructions

Boil the Beef

  • Wash the beef and place it in a pot along with water, salt, and black pepper. Bring to a boil and then lower the heat, allowing to simmer for approximately 20–25 minutes until the beef is tender.

Prepare the Stew Base

  • In a blender, combine the plum tomatoes, red bell pepper, habanero pepper, and half of the onion. Blend until smooth to create a vibrant puree.
  • Chop the remaining half of the onion and set aside for sautéing.

Cook the Base Mixture

  • In a large pan, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes.
  • Stir in the blended tomato and pepper mixture along with the remaining black pepper. Allow it to boil for 5 minutes while stirring occasionally.

Combine the Beef and Base

  • Add the tender cooked beef along with 1/2 cup of beef stock or broth to the pan. Stir everything together and adjust the consistency by adding more broth if too thick.
  • Sprinkle in the thyme, bouillon powder, and curry powder, combine well and taste the stew, adding more salt if needed.

Simmer the Stew

  • Cover the pot and let the stew simmer on low heat for about 10 minutes.

Serve

  • Serve the Nigerian Beef Stew hot, accompanied by rice, fried plantains, or your favorite bread.

Notes

For best flavor, use fresh ingredients. Adjust the spice level by modifying the habanero pepper used. Letting the stew sit after cooking enhances flavors.
