Ingredients

  • 1 cup graham cracker crumbs or crushed digestive biscuits

  • 1/2 cup heavy cream, whipped for a light, airy texture

Blueberry Compote Ingredients

  • 1 cup fresh or frozen blueberries adds vibrant flavor
  • 2 tbsp honey or maple syrup for sweetness in compote
  • 1 tsp lemon zest adds brightness
  • 1 tsp lemon juice balances sweetness

Instructions

Preparation of Crust

  • Mix graham cracker crumbs, melted butter, and honey in a bowl. Press firmly into mini muffin liners or silicone molds and refrigerate for 10 minutes.

Making Blueberry Compote

  • Over medium heat, combine blueberries, honey or maple syrup, lemon zest, and lemon juice in a saucepan. Simmer for about 5-7 minutes until thickened, then let cool.

Whipping the Filling

  • In a bowl, beat together cream cheese, goat cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped cream.

Assembling the Cheesecake Bites

  • Spoon the cheesecake mixture over the chilled crusts and swirl in the blueberry compote.

Chilling and Serving

  • Chill the filled bites for at least 2 hours or preferably overnight. Serve garnished with extra blueberries and a drizzle of honey.
