Ingredients

Cheesecake Filling

  • 125 g stracciatella di burrata Creamy center adds luscious texture.
  • 150 g mascarpone Rich and smooth.
  • 2 tablespoons Greek yogurt Can substitute with sour cream.
  • 60 g powdered sugar For sweetness.
  • 1 teaspoon vanilla extract For flavor.
  • 0.5 of a lemon lemon zest Optional, adds brightness.

Berry Compote

  • 1.5 cups mixed berries Blueberries, raspberries, strawberries, or your preferred mix.
  • 2 tablespoons sugar For sweetness in compote.
  • 1 tablespoon lemon juice Enhances the berry flavor.
  • 1 tablespoon cornstarch Optional for thicker compote.

Crust Base

  • 100 g crushed shortbread or digestive biscuits For a crunchy base.
  • 2 tablespoons melted butter To bind the crust.

Garnish

  • to taste extra berries For presentation.
  • to taste fresh mint leaf For garnish.

Instructions

Make the Compote

  • In a small saucepan over medium heat, combine mixed berries, sugar, and lemon juice. Stir gently as berries soften, approximately 5 to 7 minutes. For a thicker texture, add a cornstarch and water mixture and simmer for an additional 1 to 2 minutes until desired consistency is reached. Set aside to cool completely.

Whip the Cream

  • In a large mixing bowl, add mascarpone, stracciatella, Greek yogurt, powdered sugar, vanilla, and optional lemon zest. Fold gently to combine without overmixing. Cover and chill while preparing the crust.

Prepare the Base

  • In a separate bowl, combine crushed biscuits and melted butter until the mixture resembles wet sand with clumps forming.

Layer the Glasses

  • In serving glasses, add approximately 2 tablespoons of the cookie crumb mixture to the bottom. Spoon in 2 to 3 tablespoons of the creamy burrata mixture over the crumbs, smoothing it out. Layer generously with berry compote. Repeat layering if using taller glasses.

Garnish and Chill

  • Top with extra berries and a sprig of fresh mint. Cover and refrigerate for at least one hour for layers to set and flavors to meld.

Notes

Allow burrata and mascarpone to come to room temperature before mixing for smoother consistency. Don't rush the chilling process for the best results.
