Instructions

Preparation

  • In a mixing bowl, combine the crushed graham crackers or digestive biscuits with melted butter and honey. Stir until the mixture resembles wet sand.
  • Press the mixture firmly into a parchment-lined 20×20 cm pan to form a crust, then chill it in the refrigerator.

Make the Filling

  • In a large bowl, beat the ricotta, cream cheese, honey, vanilla extract, and lemon zest with an electric mixer until completely smooth and fluffy.
  • Spread the creamy filling evenly over the chilled crust.

Prepare the Topping

  • Mix the chopped pistachios with brown sugar, melted butter, and honey. If using dried cranberries or chopped dates, fold them in.

Assemble the Bars

  • Sprinkle the nut mixture evenly over the ricotta layer and press down gently.
  • Cover and refrigerate for at least 4 hours or overnight to set.

Serve

  • Remove the bars from the refrigerator and cut them into squares using a hot knife. Serve chilled.

Notes

Use high-quality ingredients for the best flavor. Allowing the bars to set overnight improves texture. These bars can also be made gluten-free with suitable crackers.
